Garlic-Lemon and Beer Roasted Chicken

  • 1 whole chicken (4-5 pounds)
  • 1 12-ounce can beer
  • 1 lemon, cut in half
  • 1 head garlic, cut in half
  • 1 tablespoon olive oil


  • 2 teaspoons sweet paprika
  • 2 teaspoons sea salt
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon freshly ground pepper

Grilling Instructions:

  • Combine all rub ingredients in a small mixing bowl and set aside.
  • Wash and remove giblets and the neck from the chicken. Pat dry.
  • Rub the chicken with half of garlic, half of lemon, and olive oil. Then apply some of the rub onto the chicken.
  • Next, open the can of beer and discard half of it. Place remaining rub into the can. Make sure to pierce two more holes on the top of the beer can. Then place the beer can in the center of the roaster, and place the chicken over it.
  • Place your beer- and chicken-filled roaster onto the grill over indirect medium heat for 2 hours, or until internal temperature of thigh is 180 degrees F. Remove chicken when finished cooking and let it sit (with beer can still intact) for 10 minutes before carving.
