From the Garden to the Table

There's nothing like creating a meal made with fresh, healthy vegetables from your own garden. These recipes are kept simple to showcase the freshness of your garden’s bounty.

Grilled Corn

Ingredients:
6 ears corn
6 Tbsp. butter, softened
Salt and pepper to taste

Directions:
1. Preheat an outdoor grill for high heat.
2. Peel back corn husks and remove silk. Place 1Tbsp. butter, salt, and pepper on each piece of corn. Close husks.
3. Wrap each ear of corn with aluminum foil. Place on the grill and cook about 30 minutes, turning occasionally until corn is tender.

Add a little zing to your buttered corn by making herb butter with herbs from your garden:

Herb Butter
Blend 1/2 cup softened butter or margarine and 1 tsp. each of chopped fresh basil, thyme and parsley. You can substitute these for your favorite herbs.

Dill Cucumber Slices

Ingredients:
2 medium cucumbers, peeled and sliced
1 medium onion, sliced
1/3 cup white vinegar
1 Tbs. sugar
1 tsp. salt
1/2 tsp. chopped dill

Directions:
1. Combine cucumbers and onion in a bowl.
2. Combine remaining ingredients and pour over cucumbers.
3. Cover and refrigerate at least 1 hour.

Fresh Cabbage Salad

Ingredients:
1/4 cup white wine vinegar
1/2 cup olive oil
1 tsp. Dijon mustard
1 tsp. sugar
1 tsp. salt
Pepper to taste
2 cups finely shredded cabbage
1/2 cup julienne carrots
1/2 cup julienne peppers
1/2 cup finely slivered red onion
1 small bunch chives, cut into 2-inch lengths

Directions:
1. Whisk together vinegar, oil, Dijon mustard, sugar, salt and pepper. Set aside.
2. In another bowl, toss together the cabbage, carrots, peppers, onions and chives.
3. Drizzle the vinaigrette over the salad and toss to coat.

Glazed Baby Carrots

Ingredients:
2 Tbsp. butter or margarine
1/4 cup light brown sugar
2 Tbsp. mustard
1/4 tsp. salt
3 cups sliced or baby carrots, cooked and drained.

Directions:
1. Melt margarine in pan.
2. Stir in sugar, mustard and salt.
3. Add carrots.
4. Heat and stir until carrots are glazed.
